The short version
Until you press Accept on the banner, this site sets no cookies at all and loads nothing from Google. There is no strictly-necessary cookie either: the site is static pages with no login and no basket, so it has nothing to remember about you.
What we would set, if you say yes
One thing: Google Analytics 4, so we can see which pages people actually read and which ones they leave. It is the same measurement the iOS app uses, so web and app land in one place rather than two tools that disagree.

IP addresses are truncated before storage, and advertising, remarketing and personalisation signals are switched off. We do not run ad cookies, and there are no third-party trackers, embeds or social pixels anywhere on the site.
Your choice, stored locally
Your answer to the banner is kept in your browser’s local storage under avarta.analytics-consent. That is not a cookie and is never sent to us — it exists so we do not ask you the same question on every page. Clearing your browser data clears it, and the banner will ask again.

No analytics are configured on this site right now, so there is nothing to turn off.
Turning them off in your browser instead
Every browser can block or delete cookies from its settings, and doing so will not break anything here. If you use Do Not Track or Global Privacy Control, we treat that the same as pressing Reject.
